Honey can be used in lieu of malt extract
4% is best (1tsp into 100mL)
10% is too much
Sugars that can be used:
Light malt extract
Corn syrup
Corn sugar
Dextrose
Honey
grain spawn
soak grain in water for 12-24 hours; it will triple in size
simmer grains for about 15 minutes to soften them; don't bring to boil
drain grains such that they're surface dry
fill jars no more than 2/3 full
put the lid on and cover with tin foil
alternatively you can layer two pieces of foil instead of using a lid
the bottom layer perforated to release steam and the top layer intact to preserve sterility
put in pressure cooker and cook at pressure for 90 minutes
agar
use 2% agar:LME in water:
250mL water, 5g agar, 5g LME
100mL water, 2g agar, 2g LME
10mL water, 0.2g agar, 0.2 LME
6mL per portion cup is just right for agar punching
